my red velvet cupcakes... yummy!!!

salam adik maness.. how are you doing?? feeling good?? alhamdulillah... right now ahkak jah find a new hobby & really adore about it... proudly to announce that i'm a baker in my little kitchen.. hihihi.. as some of you might know that i'm a big fan of rvc, so 90%  of my baking time goes to rvc... yeay!!!

at first, i thought baking was super difficult job to do.. but i was wrong.. after quite sometimes, this job become so easy..

my kids loved the cuppies... i always baked after i reached home, definitely at night around 9-10pm.. as a beginner, i took almost 2 hours to finish my job.. slow, eh?? the next day, i used to bekalkan my kids with 4 cuppies.. and usually my rvc finished on the next day.. the longest period was two days.. did i already mentioned about hantu cake here?? of course, this hantu cake an eat 4 cuppies at a time.. no wonder all my rvc finished in a short time..

being a beginner, the first job is to look for the best recipe.. i collect a lot of rvc recipes from my friends & internet... then i analysed the recipes to find similarity and differences between one and another..

here's the recipe.. i combined the recipe that i found in internet with my friend's recipe.. the outcome was so OHSEMMM, TASTY, etc... i love it...






ingredients:


  • 350g (2 1/3 cups) plain flour
  • 2 tbs cocoa powder
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 315g (1 1/2 cups) caster sugar
  • 250ml (1 cup) buttermilk (add 1 tsp white vinegar in fresh milk for about 10 mins)
  • 185ml (3/4 cup) vegetable oil (i replace with 125g unsalted butter)
  • 2 eggs
  • 3 tsp red food colouring
  • 2 tsp white vinegar
  • Dollar Sweets Fairy Fives sprinkles, to decorate frosting

 cream cheese frosting:
  • 250g pkt cream cheese, at room temperature
  • 100g butter, at room temperature
  • 195g (1 1/4 cups) pure icing sugar, sifted
  • 1 tsp vanilla extract
  • i add 1 tsp of white vinegar

 method:
  • Step 1
    Preheat oven to 180°C. Line eighteen 80ml (1/3-cup) capacity muffin pans with paper cases. Sift the flour, cocoa powder, bicarbonate of soda and baking powder into a large bowl. Stir in the sugar.
  • Step 2
    Whisk the buttermilk, oil, eggs, food colouring and vinegar in a jug until combined. Make a well in the centre of the flour mixture. Add the buttermilk mixture and stir until just combined.
  • Step 3
    Divide the mixture among the prepared pans. Bake for 20-25 minutes or until a skewer inserted into the centres comes out clean. Transfer the cupcakes to a wire rack to cool completely.
  • Step 4
    To make the cream cheese frosting, use an electric beater to beat the cream cheese, butter, icing sugar and vanilla in a bowl until smooth.
  • Step 5
    Pipe the icing over the cupcakes and top with the sprinkles.
